Vegetarian Maple Baked Beans

These gluten free, simple baked beans are sweetened with maple syrup and maple sugar and have minimal ingredients.  They bake for a long time while your slow-cooked meat is cooking on the grill. Despite the small quantity of pepper they are surprisingly spicy.

Note: you add the salt to dried beans at the end of the cooking, so the beans will not toughen.

12 ounces dried flageolet beans (soaked overnight or pressure cooked for 2 minutes and allowed to sit until the pressure reduces naturally, or boiled for 2 minutes and allowed to sit for 1 hour.)

Drain the soaked beans and put them in an ovenproof casserole with a lid.  We use a Corningware casserole that hold 2.5 liters or quarts.

Add to the drained beans:

2 Tablespoons ghee (clarified browned butter)

1/3 cup dark maple syrup

1/3 cup maple sugar

1/2 teaspoon black pepper (less if you don’t like spicy food)

1 large onion, peeled and diced

1 1/2 teaspoons French’s mustard (verify that this product is gluten free at the time of purchase)

2 Tablespoons of gluten free chili powder

4 cups boiling water

Cover and bake at 350 for 2 hours, remove the cover and continue to bake until the liquid has reduced to a thick sauce – another 2 hours or more is not unusual.  Stir occasionally.

When the beans are done, add 1 Tablespoon of table salt and stir thoroughly.

Blueberry Pie sweetened with Maple Syrup

You can make a fine blueberry pie using dark maple syrup as a sweetener instead of granulated sugar.  This pie is refreshingly fruity and not as sweet as the more common sugar-sweetened pie.

Here are the general rules:

for 5-6 cups of Maine wild blueberries, add the following in a large bowl:

1 cup of pure maple syrup

2 Tablespoons of cornstarch

3 Tablespoons of flavorless tapioca starch (Authentic Foods offers a tapioca starch) or 1/4 cup instant granulated tapioca.  If you use instant granulated tapioca, let the whole mixture sit for 15 minutes before constructing the pie.

1/8 teaspoon salt

3-4 Tablespoons of fresh lemon juice to offset the maple syrup

1/4 teaspoon of ground cinnamon

Use a 2-crust recipe for pie crust, and use a 9 or 10 inch glass pie dish. If you use a larger pie dish, the pie will have less depth, and if you use a smaller pie dish then the pie will be more “heaped up.”  Line the pie dish with 1 piece of crust pastry, fill with the blueberry mixture, top with the second crust. Sprinkle the top crust with 1/4 cup of granulated sugar.

Bake in preheated 375 degree oven for 1 hour.  If the blueberries are frozen, the pie may need a few extra minutes.  Cool the pie on a rack before cutting.

Beets with Maple Syrup and Ghee

This recipe uses ghee to boost the flavor of beets. Ghee is an Indian version of clarified butter. It is worth making your own ghee, because the stuff that comes in bottles in the store just doesn’t taste that great, whereas homemade ghee allows you to add the dense flavor of butter to French and fusion cooking without using entire sticks of butter. A little ghee goes a long way!

2 lb medium beets, peeled and cut into bite-sized chunks
2 Tb ghee (see recipe)
2 teaspoons bottled gluten free pure horseradish (the kind that is refrigerated, pickled)
2 1/2 tablespoons dark maple syrup
2 1/2 tablespoons rice vinegar
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Put the beet pieces and 1 cup of water in a non-stick skillet, cover and simmer for 10-15 minutes until cooked through.

Remove the top, add the rest of the ingredients and stir fry until the sauce becomes syrupy and coats the beets.

Serve hot, with barbecued chicken or any roasted meat.

Pumpkin Molasses Cake with Maple Frosting

This is a gluten-free version of a pleasant old-fashioned spice cake, with the exciting addition of a cream cheese maple icing.

In a food processor, mix until smooth:

¼ vegetable oil or melted butter
2 eggs
1/3 cup molasses
1 ¼ cups cooked pumpkin, mashed and drained of excess water

        • Spread the frosting on the cooled cake.

          Make sure all your ingredients are gluten free!

      • Grease a 9 x 13 inch pan, line the bottom with parchment paper. Pour the batter into the pan and bake in preheated 375 degree oven for 35 minutes until a toothpick inserted in the batter comes out clean.

        For the frosting:

        Mix:

        8 ounces cream cheese
        2/3 cup dark maple syrup (grade B has more flavor than grade A)
        1 teaspoon vanilla

    • Add the dry ingredients to the wet ones and mix well.

      Add

      2/3 cup dry currants

  • In a bowl, mix:

    1 ½ cups brown rice flour
    ½ cup potato starch (katakuriko)
    ¼ cup tapioca starch
    1 teaspoon xantham gum
    1 cup sugar
    1 teaspoon salt
    1 ½ teaspoons baking powder (see recipe for homemade version)
    ¾ teaspoon baking soda
    1 teaspoon cinnamon
    ½ teaspoon nutmeg
